I was curious. With the release of responsive templates, will this new site structure affect current modified layouts? I am curious because we have made a lot changes and I am afraid of what may happen after it is updated. Our changes were made with CSS overrides and some javascript.

We make a golden rule not to change a website on an update. You can still use your current theme but enjoy the other improvements in a release. Of course, I would encourage you to use the new themes once they are available
DN75 was not an automatic beta update due to the significant changes. Therefore we rolled it out to selected sites over time as testing progressed. It's open now for general beta testing so if you like we can update you?

I was expecting the general roll out the latest today, according with Decos PR it would be released January 9th, which in Australia was yesterday, here in USA is today, so when is the released then?

I absolutely love the business hub, it is the main reason we have stuck it out with DN for so many years.
But I think front-end UX should always be a huge concern, thats how we make an impression on prospective clients. If only 10% of thought goes into that portion of development then I see a lot of missed opportunities for sales. Maybe focus more on front end functionality? You've already nailed the bus hub.
That being said, with 7.5 and 8 it looks like you hit on a lot of aspects that were holding us back from jumping all in. Only time will tell, but I think 7.5 is a huge leap in the right direction. I'm eager to get in there and get my hands dirty. Hopefully, TODAY?
